Place oil in a large but shallow casserole dish. Heat on high for 30 seconds. Add shallot strips, garlic, capsicum slices and parsely and cook on high for 3 minutes. Add honey, lemon juice and sherry and cook on high for 2 minutes. Add prawns and cook, covered, on mediun high for 3-4 minutes, or until prawns are pink and tender. Stir halfway during cooking. Season to taste with salt and pepper.
Honey king prawns can be served with boiled rice if desired.
